Carrot Muffins


  • 1 Egg
  • 1/2 cup of melted marg
  • 1/2 cup of light brown sugar
  • 2 cup of self raising flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of nutmeg
  • 2 cups of grated carrots


  • Add egg, marg and sugar in a bowl
  • Sieve dry ingredients and mix
  • Fold in grated carrot
  • Lightly grease a muffin tray
  • Place in oven at 150 degrees for 20 mins

This was my first time baking carrot muffins and I was well impressed with how they came out. The muffin was so soft. I will definately be adding this recipe to my favourite list.
